No point in waiting for the remake, as it would be a long wait and the final product will be different anyway. Starting with Gothic 1 is preferable, the mechanics are slightly more clunky, but the climate is awesome and you will experience the full plot. A lot of Gothic fans (me included) even prefer the first part over the second.
